Instant Rabdi Ingredients: Ghee - 1 tsp Green Cardamom - 1 pod Milk - 500 ml Saffron - 6-7 strands Paneer / Chhena (Homemade) - 1.5 cup Condensed milk - 1/2 cup Sogar (optional) - 2 tbsp Rose essence (optional) - 1/8 tsp Method: 1. Heat ghee in a pan on medium flame 2. Add crushed cardamom pod once the ghee is slightly hot 3. Turn the flame to low and fry the cardamom for 30 seconds 4. Add milk and bring to a simmer 5. Add saffron in a bowl    6. Add 2 tbsp of hot milk from the pan in the saffron bowl 7. give it a nice mix and add it to the pan with milk 8. Continue to cook the milk for about 15-20 minutes on low flame or until the milk is reduced to half   9. Gently stir to incorporate the cream (malai) on the top, back into the milk 10. Gur Ki Kheer Ingredients : Full cream milk - 1 ltr Rice (medium or small grain) - 1/4 cup Powdered jaggery(preferably date jaggery) - 1/2 cup Almonds (soaked, peeled and chopped) - 1 tbsp Cashew nuts (chopped) - 1 tbsp Pistachios (chopped) - 1 tbsp Golden raisins - 1 tbsp Green cardamom powder - 1/2 tsp Method : 1. Wash rice nicely and soak in water for 15 minutes 2. Heat milk in a heavy bottomed pan 3. As soon as the milk comes to a boil, lower the flame 4. Remove rice from water and add to the milk 5. Mix and cook on low medium flame for 15-20 minutes 6. Keep on stirring in between so that it doesn't stick to the bottom of the pan 7. Vermicelli Kheer With Jaggery Ingredients : Milk - 3 cups Vermicelli (seviyan / semiya) - 1/2 cup Jaggery - 1 cup Cardamom powder - 1/2 tsp Cashew nuts (Cut into halves)- 10-12 Raisins - 10-12 Almonds (chopped) - 10-12 Ghee - 2 tbsp Method : 1. Add jaggery in a pan with 1 cup of warm water. 2. Heat it on medium flame and cook for 2-3 minutes by stirring in between 3. Take it off the flame and let it cool 4. Heat 2 tbsp ghee in a pan on medium flame. 5. Add cashew nuts and roast them till they turn light golden 6. Take them out in a plate 7. Coffee Ice Cream (No Eggs) Ingredients : Full Fat Milk - 500 ml (2.5 cups) Cornflour - 1 tbsp Sugar - 1/2 cup Instant Coffee powder - 1.5 tbsp Fresh Cream - 150 ml (3/4 cup) Method : 1. Combine the coffee and 1 tbsp hot water in a bowl, mix well and keep aside 2. Combine the cornflour and 100 ml (1/2 cup) milk in a bowl, mix well and keep aside 3. In a deep pan add 400 ml (2 cups) milk and sugar and cook it on medium flame 4. Stirring occassionally cook it for 12-15 minutes 5. Add the cornflour milk mixture and mix well 6. Cook on medium flame stirring continuously for 7-8 minutes or till the mixture starts sticking to the ladle 7. Add the coffee water mixture and mix well 8. Cook for 1 minute stirring continuously 9. Rava Kesari Ingredients : Semolina (Sooji) - 1/2 cup Desi Ghee - 4 tbsp Saffron strands - 8-10 Milk - 2 cups Sugar - 1 cup Turmeric powder - a pinch Pistachios (chopped) - 1/2 tbsp Method : 1.  Add saffron strands to 2 tbsp warm water and dissolve  2.  In a pan heat ghee and add semolina.  3.  Cook on low flame for 5-6 minutes till its aromatic and light brown in colour. 4. Malai Makhan Ingredients : Full cream milk - 500 ml Malai / Fresh Cream (Of full cream milk) - 250 gm Sugar - 4-5 tbsp Powdered Sugar - 1 tbsp Dry Fruits as per choice Saffron - 10-12 strands Green powdered powder - 1/2 tsp Method : 1. Rice Kheer Ingredients : Basmati rice - ¼ cup Whole milk – 1 litre  Sugar - 6 tablespoons or add as required Cardamom powder - ½ teaspoon Saffron strands - 14 to 16 Almonds - 12  Cashews (chopped) - 1 tablespoon Unsalted pistachios (chopped) - 1 tablespoon Golden raisins - 1 tablespoon Chironji - 1 teaspoon Method : 1. Rinse ¼ cup basmati rice a couple of times till the water runs clear of the starch. 2. Then soak the rice in enough water for 15 to 20 mins. 3. In a small bowl take 1 cup boiling water and then add 12 almonds to it. Cover and keep aside for 30 minutes.  4. Then peel and slice almonds.  5. Take whole or full fat milk in a heavy wide pan or saucepan or kadai. 6. Keep the pan on medium-low heat. Stir at intervals so that the milk does not stick at the bottom of the pan. 7. Falahari Apple Burfi  Ingredients : Apples - 3 (medium size) Sugar - 1 cup Cashew nuts - 1/2 cup Almond flakes - 3 tbsp Dessicated coconut - 100 gm Cardamom powder - 1 tsp Desi Ghee - 3 tsp Method : 1. Grind the cashews to a coarse powder 2. Wash the apples and peel them nicely 3. Grate the apples with the thinner side of the grater 4. Keep rotating the apple while grating and discard the middle portion of seeds 5. Heat ghee in a pan 6. Add the apple pulp in the pan and cook on medium flame by stirring continuously 7. Rice Kheer with Condensed Milk  Ingredients : Full cream milk - 1 litre Basmati rice - 1/3 cup Condensed milk - 1/2 tin (200 gm) Cardamom powder - 1/2 tsp Saffron strands - 12-14 Raisins - 1 tbsp Cashew nuts (chopped) - 10-12 Almonds - 10-12 Pistachios (chopped) - 8-10 Method : 1. Wash and soak rice in water for 15 minutes 2. Soak saffron in 2 tbsp warm milk for 15 minutes 3. Soak almonds in hot water for 20 minutes 4. Pour milk in a heavy bottom pan. Drain the rice and add it to the milk 5. Bring the milk and rice mixture to a boil on high heat 6. Reduce the heat to low and let simmer for 45 minutes, stirring frequently  7. Chocolate Ice Cream with Milk Powder Ingredients : Milk - 2 cups Drinking Chocolate - 4 tbsp Sugar - 3/4 cup Cornflour - 2 tbsp Milk powder - 2 tbsp Method : 1.  In a small mixing bowl take milk powder, then add cornflour and mix well with a spoon. 2. Add 1/4 cup milk and whisk it well so that there are no lumps. 3. Keep it aside 4. In a sauce pan, bring remaining milk to boil 5. Now add sugar and mix well until sugar completely dissolves 6. Now add milk powder mixture and keep cooking until it becomes slightly thick and coats the laddle 7. Switch off the flame and set aside to cool. 8. Once completely cool, blend it with drinking chocolate in a blender 9. Transfer to a freezer proof box and freeze for at least 4 hours. 10. Then beat it and freeze it. Mango Ice Cream with Milk Powder Ingredients : Milk - 2 cups Mangoes - 2 (for 3/4 cup puree) Sugar - 1/2 cup Cornflour - 2 tbsp Milk powder - 2 tbsp Method : 1. Peel the skin from mangoes, then chop it roughly. 2. Transfer chopped mangoes to a mixer jar and blend it to a smooth puree 3. In a small mixing bowl take milk powder, then add cornflour and mix well with a spoon. 4. Add 1/4 cup milk and whisk it well so that there are no lumps. 5. Keep it aside 6. Makhana Kheer For Vrat | Foxnut Pudding For Fast Ingredients: Makhana (Fox nut) - 2 cup Milk - 1 litre Almonds - 1/2 cup Pistachios - 1 tbsp Chironji (Charoli Seeds) - 1 tbsp Green Cardamom Powder - 1 tsp Sugar - 1/2 cup Desi Ghee - 2 tbsp Method: 1. Soak Almonds and Pistachios in hot water for 10 minutes 2. After 10 minutes peel the almonds and pistachios 3. Finely chop the almonds and pistachios 4. Heat Ghee in a Kadahi 5. Poppy Seeds Halwa  Ingredients: Poppy seeds (Khaskhas) - 1 cup Dried Dates - 8 Dry Coconut (Gola Nariyal) - 100 gm Almonds - 20 Sugar - 1 cup Desi Ghee - 3 tbsp Milk - 2 cup Green Cardamom Powder - 1 tsp Almond slivers - 1 tbsp Method: 1. Cut dry coconut to small pieces and soak in water for 2 hours 2. Soak almonds, dates and poppy seeds in water separately for 2 hours 3. After 2 hours remove skin from almonds 4. Deseed the dates 5.
