Bread Poha Ingredients: Bread Slices (Cut into cubes) - 6 Oil - 2 tbsp Mustard seeds - 1 tsp Onion (finely chopped) - 1/2 cup Green Chilli (finely chopped) - 1 tsp Ginger (finely chopped) - 1 tsp Curry leaves (chopped) - 6-7 Tomatoes (finely chopped) - 1 cup Turmeric powder - 1/4 tsp Red Chilli powder - 1/4 tsp Hing (Asafoetida) - a pinch Coriander leaves (finely chopped) - 2 tbsp Salt - 1/2 tsp or as per taste Method : 1. Heat oil in a pan 2. Add mustard seeds and let them crackle 3. Add chopped onion and saute on medium flame till they turn translucent 4. Add chopped green chilli, ginger and curry leaves 5. Saute till the raw aroma of ginger goes away 6. Add turmeric powder, red chilli powder, hing and mix well 7. Add chopped tomatoes and stir well 8. Add salt and mix very well 9. Tinda Do Pyaza Ingredients: Tinda (Indian Apple Gourd) - 250 gm (small in size) Small Onions (shallots) - 250 gm Big Onion - 250 gm Cumin seeds - 1/2 tsp Bay leaf - 1 Coriander Powder - 2 tsp Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Garam Masala Powder - 1 tsp Ginger (Grated) - 1 tbsp Green Chilly - 3 (Cut into big pieces) Oil - 2 tbsp Salt - 1 tsp Curd - 4 tbsp Coriander Leaves (Finely chopped) - 1 tbsp Method: 1. Sabut Moong Dal Chilla Ingredients: Sabut Moong Dal - 1 cup Rice Flour - 1 tbsp Green Chillies - 4  Ginger (chopped) - 2 tbsp Salt - 1 tsp Red Chilli Powder - 1/2 tsp Chat Masala Powder - 1 tsp Oil for shallow frying  Cottage cheese (chhena) - 1/2 cup Green Chutney  Method: 1.  Soak the Moong dal for at least 5 - 6 hours or preferably overnight 2.  Add soaked moong dal along with green chilly and ginger piece in a grinding jar and grind till it attains paste like consistency.   3. Mango Sour Chunda | Mango Sour Kuchla   Ingredients: Raw Mango - 2 kg Salt - 5 tbsp Hing ( Asafoetida) - 1/2 tsp Big Cardamom - 7 Cloves - 16 Cumin seeds -  2 tsp Black Pepper - 1 tsp Cinnamon - 2" piece Red Chilli Powder - 1 tbsp Sugar - 400 gm Method: 1. Wash the mangoes and wipe them with a kitchen towel 2. Peel the mangoes 3. Grate the mangoes 4. Add Hing and salt to the grated mangoes 5. Mix it with a clean and dry spoon and cover it with a muslin cloth 6. Keep it in sun for 2 days (Do mix it once a day with a clean and dry spoon) 7. Grind Big Cardamom, cloves, cumin seeds, black pepper and cinnamon to a coarse powder 8. After 2 days, add  grounded powder and red chilli powder  9. Mix well with a clean and dry spoon  10. Chaach Ke Aloo | Buttermilk Potatoes Ingredients: Potato (boiled and peeled) - 500 gm Buttermilk (Chaach) - 500gm Desi Ghee - 2 tbsp Cumin Seeds - 1/2 tsp Fenugreek Seeds - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Salt - 1 tsp Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Coriander leaves (finely chopped) - 1 tbsp Method: 1. Break the boiled potatoes into pieces 2. Take buttermilk in a bowl and add salt, turmeric powder, red chilli powder in it. 3. Mix the masalas nicely in the buttermilk 4. Heat ghee in a pan 5. Add fenugreek seeds, cumin seeds and hing and let them splutter 6. Add potato pieces and stir fry them 7. Fry the potatoes till they become light brown 8. Now add the buttermilk mixture in the potatoes 9. Let the gravy boil 10. When the gravy starts boiling lower the flame and cook for 10 minutes 11.
