🥒 Step 1: Prep the Ridge Gourd

In a mixing bowl, whisk together:

1 cup curd (yogurt)

2 tbsp besan (gram flour)

Add ½ tsp turmeric powder and salt to taste.

Heat 1 tbsp ghee in a deep pan.

1 small cinnamon stick

2–3 cloves

1 pinch hing (asafoetida)

1–2 dry red chillies

½ tsp cumin seeds
-
¼ tsp fenugreek seeds (methi dana)

Let them sizzle for a few seconds.
Heat 1 tbsp ghee in a deep pan.

Once it begins to boil, lower the heat and let it simmer for 15 minutes, stirring occasionally.

In a small pan, heat 1 tbsp ghee.
