Rajasthani Mirchi Vada

Rajasthani Mirchi Vada 



Ingredients :

Green Chillies (large sized) - 6 (250 gm)
Potato (boiled) - 250 gms
Besan - 1.5 cups
Green chillies (finely chopped) - 2 tsp
Ginger (grated) - 1 tbsp
Red chilli powder - 1/2 tsp
Hing - 1/4 tsp
Green coriander (finely chopped) - 2 tbsp
Turmeric powder - 1 tsp
Coriander powder - 1 tsp
Cumin seeds - 1/2 tsp
Ajwain (carom seeds) - 1/2 tsp
Amchur powder - 1/2 tsp
Salt - 1 tsp or as per taste
Garam masala - 1/2 tsp
Oil for frying

Method :

1. Take besan in a bowl and add some water to it. Mix it nicely making sure no lumps are formed
2. Add some more water to it for making smooth texture batter having pouring consistency like pakoda batter
3. Add 1/2 tsp salt, 1/2 tsp turmeric powder, ajwain, red chilli powder
4. Mix and keep the batter aside for a while
5. Break the boiled potatoes with your hands into pieces 
6. Heat 1 tbsp oil in a pan
7. Add hing, cumin seeds and let them crackle
8. Turn the flame to low and add ginger, green chillies and saute for a while
9. Add 1/2 tsp turmeric powder and mix
10. Now add the broken pieces of potato, 1/2 tsp salt, coriander powder, amchur powder
11. Turn the flame to medium, cook while mashing and stirring the ingredients
12. Add garam masala powder, green coriander and mix nicely
13. Take out the prepared stuffing in a bowl and let it cool
14. Make a slit in the thick green chillies and remove the seeds
15. Insert some stuffing inside the chilli 
16. Assemble all the chillies like wise
17. Heat oil in kadahi to fry the vadas
18. Put a drop of besan batter in the oil to check if it is nicely hot
19. Change flame to medium
20. Lift a chilli and dip it in besan batter. Using a spoon carefully coat it with the batter
21. Lift the vada holding its stalk and add in the kadahi for frying
22. Do not flip or stir the vada in the beginning. Bounce some oil over it using the ladle
23. After a while, flip it and fry it for 2-3 minutes until it becomes golden brown
24. After frying the vada, drain it out and place it on a plate
25. Serve tasty, spicy Rajasthani Mirchi Vada with tomato sauce or green chutney
