पनीर बड़ा



सामग्री:

पनीर (कसा हुआ) - १ कप
डबलरोटी स्लाइस - २
दही - १ कप
मैदा - १ कप
हरी धनिया (बारीक कटी) - १ बड़ा चम्मच
हरी मिर्च (बारीक कटी) - १ 
नमक - १ छोटा चम्मच
तेल (तलने के  लिए ) - १  कप   

विधि :

१. पनीर को अच्छी तरह गूंथ लें
२. डबलरोटी स्लाइस को दही में भिगो दें.
३. इसमें हरी मिर्च, हरी धनिया, नमक और मैदा एक साथ मिला लें.
४. इसमें पनीर मिला लें.
५. कढ़ाई में मध्यम आंच पर तेल गरम करें 
६. हथेली को चिकना करें  और थोड़ा मिश्रण ले कर हाथ से बड़े का आकर दें
७. बड़े को सुनहरा भूरा होने तक तेल में  तल लें.
८. गरमा गरम बड़े हरी धनिया की चटनी या टमाटर सॉस के साथ परोसें 


Paneer Vada | Cottage Cheese Cutlet

Ingredients:

Paneer / Cottage Cheese (grated) - 1 cup
Bread Slice - 2
Curd - 1 cup
All Purpose flour - 1 cup
Green coriander leaves (finely chopped) - 1 tbsp
Green chili (finely chopped) - 1
Oil (for frying) - 1 cup
Salt - 1 tsp

Method:

🧀✨ Step 1: Prepare the Paneer

Take fresh paneer (cottage cheese) and knead it well until smooth and soft.
This gives the vadas a creamy and uniform texture.


🍞🥣 Step 2: Soak the Bread

Dip a slice of bread in curd (yogurt) and mash it gently.
This acts as a natural binder and adds a tangy flavor to the mix.


🌿🌶️ Step 3: Mix in the Flavors

To the soaked bread, add:

  • Finely chopped green chilli

  • Chopped fresh coriander leaves

  • Salt to taste

  • A spoonful of flour (for binding)
    Mix everything thoroughly to form a soft dough-like mixture.


🧀➕ Step 4: Combine with Paneer

Add the kneaded paneer to the above mixture and blend everything until well combined.
The result should be a pliable, smooth mixture ready for shaping.


🔥🥘 Step 5: Heat the Oil

In a deep wok or kadai, heat oil on medium flame for deep frying.


✋🍥 Step 6: Shape the Vadas

Grease your palms with a little oil.
Take small portions of the mixture and shape them into cutlet-style rounds or vadas.

🍳🟡 Step 7: Fry Until Golden Perfection

Gently drop the shaped vadas into the hot oil.
Deep fry on medium heat until they turn crispy and golden brown on all sides.
Remove and drain on a paper towel to remove excess oil.


🥣🌿 Step 8: Serve & Enjoy!

Serve the hot, crispy Paneer Vadas with green coriander chutney, tomato ketchup, or your favorite dip.
Perfect as a party starter, tea-time snack, or festive treat!
