🥄 Homemade Amla Pickle Recipe
A traditional, tangy, and immune-boosting Indian gooseberry pickle
Ingredients :
Amla - 500 gmMustard Oil - 1 cup
Hing (Asafoetida) - 1 tsp
Fenugreek seeds - 1 tsp
Salt - 3 tbsp
Turmeric powder - 2 tsp
Red Chilli powder - 1 tsp
Yellow mustard seeds (coarsely grounded) - 3 tsp
Fennel seed powder - 2 tsp
Method :
🧼 1. Clean and Prep the Amla

Wash the amlas (Indian gooseberries) thoroughly in clean water to remove dirt or impurities.
💨 2. Steam the Amlas

Pour ½ litre water into a deep saucepan and bring it to a boil.

Place the amlas in a colander or steamer basket that fits over the saucepan.

Once the water starts boiling, place the colander over the saucepan and cover it with a lid.

Steam the amlas for 5–7 minutes until they become slightly soft.
❄️ 3. Cool and Dry the Amlas

Remove the steamed amlas onto a plate and allow them to cool completely.

Cut each amla and remove the seeds.

Spread the amla pieces on a clean, dry cloth and place them under the sun for a few hours to let any remaining moisture dry out.
🍳 4. Prepare the Pickle Masala

Heat ½ cup oil in a frying pan on medium flame.

Add fenugreek seeds (methi dana) and a pinch of asafoetida (hing).

Lower the flame and add:

Turmeric powder

Fennel seed powder (saunf)

Red chilli powder

Yellow mustard powder (peeli rai)

Salt to taste

Mix and sauté the spices gently for a minute without burning them.
🥣 5. Mix in the Amla

Add the dried amla pieces into the masala.

Mix well to coat the pieces evenly with the spice mixture.

Allow the mixture to cool completely.
🫙 6. Store the Pickle

Transfer the cooled pickle into a clean, dry glass jar or ceramic container.

Let it marinate for 3–4 days, stirring once daily with a clean, dry spoon.
🛢️ 7. Final Step – Add More Oil

After 3–4 days, pour in the remaining mustard oil to ensure all amla pieces are fully submerged in oil. This helps preserve the pickle.

Store it in a cool, dry place and enjoy it with your meals.

This pickle can last up to 1 year if stored properly.
💡 Tips to Remember :
- Take good quality amla that are big and clean
- Before adding the amla pieces in the pickle make sure they are not containing extra water
- For preserving the pickle for long durations, it should always be dipped in oil
- Always take out the pickle with a clean and dry spoon otherwise there are chances of spoilage
