Mint  Raita | Pudina Raita Ingredients: Curd / Yogurt - 1 cup Fresh mint leaves - 1/2 cup Red Chilli Powder - 1/4 tsp Roasted Cumin Powder - 1/2 tsp Chat Masala powder - 1/4 tsp Black Salt   - 1/2 tsp Salt - 1/2 tsp Method : 1. Whisk curd in a bowl 2.  Wash mint leaves nicely  3.  Grind mint leaves to a fine paste using 2-3 tbsp water  4.  Add mint paste along with its juices to the curd  5.  Stir very well 6.  Spice the curd with salt, black salt, red chilli powder, cumin powder and chat masala powder 7.  Mix everything very well 8. Garnish the raita with a sprig of mint leaves 9. Serve raita with baked or tandoori starters.  10. It can also be served as a side dish in any meal. 11. Bread Poha Ingredients: Bread Slices (Cut into cubes) - 6 Oil - 2 tbsp Mustard seeds - 1 tsp Onion (finely chopped) - 1/2 cup Green Chilli (finely chopped) - 1 tsp Ginger (finely chopped) - 1 tsp Curry leaves (chopped) - 6-7 Tomatoes (finely chopped) - 1 cup Turmeric powder - 1/4 tsp Red Chilli powder - 1/4 tsp Hing (Asafoetida) - a pinch Coriander leaves (finely chopped) - 2 tbsp Salt - 1/2 tsp or as per taste Method : 1. Heat oil in a pan 2. Add mustard seeds and let them crackle 3. Add chopped onion and saute on medium flame till they turn translucent 4. Add chopped green chilli, ginger and curry leaves 5. Saute till the raw aroma of ginger goes away 6. Add turmeric powder, red chilli powder, hing and mix well 7. Add chopped tomatoes and stir well 8. Add salt and mix very well 9. Tinda Do Pyaza Ingredients: Tinda (Indian Apple Gourd) - 250 gm (small in size) Small Onions (shallots) - 250 gm Big Onion - 250 gm Cumin seeds - 1/2 tsp Bay leaf - 1 Coriander Powder - 2 tsp Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Garam Masala Powder - 1 tsp Ginger (Grated) - 1 tbsp Green Chilly - 3 (Cut into big pieces) Oil - 2 tbsp Salt - 1 tsp Curd - 4 tbsp Coriander Leaves (Finely chopped) - 1 tbsp Method: 1. Peel and wash the small onions 2. Peel and wash the Tinda 3. Peel and grate the big onions 4. Using a knife make spiral cuts in the tinda without breaking it 5. Heat Oil in a pan 6. Add Cumin seeds and bay leaf 7. Sabut Moong Dal Chilla Ingredients: Sabut Moong Dal - 1 cup Rice Flour - 1 tbsp Green Chillies - 4  Ginger (chopped) - 2 tbsp Salt - 1 tsp Red Chilli Powder - 1/2 tsp Chat Masala Powder - 1 tsp Oil for shallow frying  Cottage cheese (chhena) - 1/2 cup Green Chutney  Method: 1.  Soak the Moong dal for at least 5 - 6 hours or preferably overnight 2.  Add soaked moong dal along with green chilly and ginger piece in a grinding jar and grind till it attains paste like consistency.   3. Remove the moong dal batter into a mixing bowl, add rice flour, salt, red chilli powder, chat masala powder 4. Mix everything well 5. Add little water to make the batter of pouring consistency 6. Place a tawa on medium heat, add 2 teaspoons of oil and spread it evenly on tawa 7. Once the oil is hot, add two heapful tablespoons of the moong dal batter on the tawa 8. Quickly spread it using the back of a spoon and apply little oil on the sides of the chilla.

Torai (Ridge Gourd) ki Kadhi Ingredients: Torai (Ridge Gourd) - 1/2 kg Curd - 1 cup Besan - 4 tbsp Turmeric Powder - 1 tsp Salt - 1 tsp Water - 4 cups Cinnamon Stick - 1" piece Cloves -2 Curry Leaves -   15-20 leaves Hing (Asafoetida) - 1/2 tsp Dry Red Chillies - 2 (broken) Cumin Seeds - 1/2 tsp Mustard seeds - 1/2 tsp Fenugreek seeds - 1/4 tsp Ghee - 2 tbsp Red Chilli Powder   - 1/2 tsp Method: 1.   Peel and Chop Torai to round pieces of 1/2" thickness and wash them 2. Mix curd and besan nicely 3. Add salt and turmeric to it and mix nicely 4.   Add water to this and mix well 5. Heat 1 tbsp ghee in a Pan 6. Vegetable Pulao Ingredients: Basmati Rice - 1.5 cup Cauliflower (Chopped) - 1/4 cup French Beans (Chopped) - 1/4 cup Carrot (Chopped) - 1/4 cup Capsicum (Chopped) - 1/4 cup Potato (Chopped) - 1/2 cup Green Peas - 1/2 cup Tomato (Chopped) - 1/2 cup Onion (Thinly sliced) - 1 cup Ginger (grated) - 1 tsp Green Chilli (Finely chopped) - 1 Garlic (Finely chopped) - 1 tsp Cumin Seeds - 1 tsp Black Pepper - 7-8 Bay Leaf - 1 Cloves - 4 Green Cardamoms - 4 Black Cardamom - 1 Mace - 2 single strands Cinnamon - 1 inch Desi Ghee - 2 tbsp Salt - 1 tsp Water / Veg Stock / Whey Milk - 3 cups Lemon - 1/2 Coriander leaves (finely chopped) - 1 tbsp Method: 1. Mango Sour Chunda | Mango Sour Kuchla   Ingredients: Raw Mango - 2 kg Salt - 5 tbsp Hing ( Asafoetida) - 1/2 tsp Big Cardamom - 7 Cloves - 16 Cumin seeds -  2 tsp Black Pepper - 1 tsp Cinnamon - 2" piece Red Chilli Powder - 1 tbsp Sugar - 400 gm Method: 1. Wash the mangoes and wipe them with a kitchen towel 2. Peel the mangoes 3. Grate the mangoes 4. Add Hing and salt to the grated mangoes 5. Mix it with a clean and dry spoon and cover it with a muslin cloth 6. Keep it in sun for 2 days (Do mix it once a day with a clean and dry spoon) 7. Grind Big Cardamom, cloves, cumin seeds, black pepper and cinnamon to a coarse powder 8. After 2 days, add  grounded powder and red chilli powder  9. Mix well with a clean and dry spoon  10. Add sugar 11. Mix well with a clean and dry spoon  12. Cover it with a muslin cloth and keep it in sun for 15 days 13. Make sure to mix it once everyday with a clean dry spoon. 14.
