Chana Masala Powder | चना मसाला पाउडर

Chana Masala Powder  Ingredients : Coriander seeds - 1/4 cup Cumin seeds - 1/4 cup Pepper corns - 2 tsp Cloves - 1 tsp Black cardamoms - 2 Cinnamon - 2 inch Mace (javitri ) - 1 Fennel seeds - 1 tsp Shahi Jeera - 1 tsp Whole Red Chilli - 8-10 Amchur powder - 2 tbsp Kasuri methi - 2 tbsp Turmeric powder - 1 tsp Method : 1. Add coriander seeds, cumin seeds, pepper corns, cloves, black cardamom in a pan 2. Add cinnamon, mace, fennel seeds, shahi jeera and dry roast on low flame for 4-5 minutes 3.  Add whole red chillies and roast on low flame for 30 seconds 4. Let the masalas cool 5. Transfer the roasted masalas in a grinder 6. Add amchur powder, kasuri methi, turmeric powder and grind to a fine powder 7. Chana masala powder is ready.  8. Karela (Bitter gourd) Pickle | करेला का अचार

Karela Pickle Ingredients : Karela (raw and medium size)- 500 gms Salt - 2 tsp Fennel seeds - 8 tbsp Fenugreek seeds - 2 tsp Cumin seeds - 2 tsp Carom seeds - 2 tsp Yellow mustard seeds - 6 tbsp Hing - 1 tsp Black Pepper - 20 - 25 Mustard Oil - 1.5 cup Turmeric powder - 2 tsp Kashmiri Red chilli powder - 2 tbsp Black Salt - 2 tsp Kalonji - 1 tsp Lemon - 4 Vinegar - 4 tbsp Method : 1. Wash karela nicely and then make them dry completely 2. Remove stalks from both ends and cut them into 1/2 inch thick roundels 3. Transfer the chopped karela in a bowl 4. Add 1 tsp salt and mix well 5. Cover and keep aside for 1 hour 6. Now sieve the karela so that the water is removed from karelas.  7. Leave them for 5 minutes in the sieve to remove the water nicely 8. Place the karela pieces on a clean cloth one by one to dry them under the Sun or under the fan 9. Dry roast fennel seeds, fenugreek seeds, cumin seeds, carom seeds by stirring continuously for 2  minutes on low flame 10. Add mustard seeds,

Instant Malai Peda with Condensed Milk | इंस्टेंट मलाई पेड़ा कंडेंस्ड मिल्क वाला

Instant Malai Peda using Condensed Milk Ingredients : Condensed Milk - 400 gm Milk - 1.5 cup Cornflour - 1 tsp Lemon Juice - 1 tbsp Green Cardamoms (powdered) - 4-5 Desi Ghee - 1 tbsp Pistachios for garnishing Method : 1. Heat ghee in a pan 2. Add milk and lemon juice 3. Cook till the mixture starts curdling 4. Make a paste of cornflour with 2 tbsp water and add it to the milk mixture after it curdles 5. Add condensed milk and continue cooking on medium flame by stirring in between  6. Cook till the mixture leaves the sides of the pan  7. Add cardamom powder and mix 8. Remove from the flame and transfer to a dish 9. Let it cool a bit 10. Apply little ghee on your palms and shape the warm mixture to pedas 11. Garnish with pistachios 12.
