Coffee Ice Cream (No Eggs) Ingredients : Full Fat Milk - 500 ml (2.5 cups) Cornflour - 1 tbsp Sugar - 1/2 cup Instant Coffee powder - 1.5 tbsp Fresh Cream - 150 ml (3/4 cup) Method : 1. Combine the coffee and 1 tbsp hot water in a bowl, mix well and keep aside 2. Combine the cornflour and 100 ml (1/2 cup) milk in a bowl, mix well and keep aside 3. In a deep pan add 400 ml (2 cups) milk and sugar and cook it on medium flame 4. Stirring occassionally cook it for 12-15 minutes 5. Add the cornflour milk mixture and mix well 6. Cook on medium flame stirring continuously for 7-8 minutes or till the mixture starts sticking to the ladle 7. Add the coffee water mixture and mix well 8. Cook for 1 minute stirring continuously 9. Soya Matar Bhurji Ingredients: Soya Granules - 1 cup Onion  (finely chopped) - 3/4 cup  Tomato  (finely chopped) - 3/4 cup  Capsicum  (finely chopped)  - 1/2 cup Green peas (boiled) - 1/2 cup Green Chilli (finely chopped) - 1  Ginger  (finely chopped)  - 1 tsp  Salt - 1 tsp or as per taste Turmeric powder - 1/4 tsp Red chilli powder - 1/2 tsp Garam masala powder - 1/4 tsp Lemon juice - 2 tsp Oil - 2 tbsp Coriander leaves  (finely chopped)  - 1 tsp  Method: 1. Boil Soya granules in enough water for 3 minutes 2. Wash them in running water in a sieve  3. Squueze excess water and keep them aside 4. Heat Oil in a Pan and fry onions till they become translucent 5. Add ginger, green chillies and stir well for 2 minutes 6. Add tomatoes, salt, 2 tbsp water and cook till tomatoes become mushy 7. Broccoli Potato Stir Fry (Indian style) Ingredients : Potato (cubed) - 1 cup (1/2 inch pieces) Broccoli - 250 gm Oil - 2 tbsp Cumin seeds - 1/2 tsp Green chilli (chopped) -1 Garlic (chopped) - 1 tbsp  Turmeric powder - 1/8 tsp Red chilli powder - 1/4 tsp Garam masala powder - 1/2 tsp Cumin powder - 1/4 tsp Coriander powder - 1/4 tsp Salt - 3/4 tsp or as per taste Lemon Juice - 1 tbsp Sesame seeds (toasted) - 1 tsp Method : 1. Cut the broccoli florets to your preferrable size 2. Add them to warm water and leave for 2-3 minutes 3. Drain and set aside 4. Heat 1.5 tbsp oil in a pan and add cumin seeds 5. When they crackle add chopped garlic and green chillies 6. Saute for 30 seconds 7. Add cubed potatoes to the pan and stir fry for a minute 8. Cover and cook on medium heat until done al dente 9. Cold Cucumber Soup Ingredients : Cucumbers - 500 gm Ginger (chopped) - 2 inch piece Green Chillies (chopped) - 2 Salt - 1 tsp or as per taste Buttermilk - 2 cups Black pepper powder - 1/2 tsp Lemon Juice - 1 tbsp Method : 1. Peel the cucumbers and cut into chunks 2. In a blender add cucumber chunks 3. Add ginger, green chillies, salt, butter milk and blend to a fine puree 4. Add black pepper powder, lemon juice and blend again 5. Pour into 2 soup bowls 6. Chill in a refrigerator for at least 30 minutes 7. Rice and Poha Dosa (No Dal Dosa) | चावल पोहा डोसा (बिना दाल)

Rice and Poha Dosa Ingredients : Short grain rice - 1 cup Fenugreek seeds - 1/2 tsp Poha - 1/2 cup Salt - 1/2 tsp Oil for cooking Dosa Method : 1. Wash rice under running water and drain 2. To the washed rice, add fenugreek seeds 3. Add 2 cups water and let the rice soak for at least 3 hours. 4. After 3 hours, just 5 minutes before grinding the batter add poha to the soaked rice 5. Let the poha soak for 5 minutes and then completely drain all the water from the soaked ingredients 6. Transfer the soaked ingredients to a grinder  7. Add 1/3 cup water and grind the ingredients to a coarse paste 8. Again add 1/3 cup water and grind the mix to a smooth batter 9. Transfer to a vessel and check the consistency of the batter. The batter should slide off a spoon and form ribbons 10. Cover and keep the batter in a warm place to ferment for at least 8 hours. 11. When the batter has fermented, add salt and mix with a gentle hand.  12.  Grease a non-stick tawa with a few drops of oil and heat it on
