Rava Medu Vada Ingredients : Rava / Suji - 1.5 cup Curd - 3/4 cup Green Coriander (finely chopped) - 2 tbsp Ginger (finely chopped) - 1 inch Green Chilly (finely chopped) - 2 Salt - 1 tsp or as per taste Baking Soda - a pinch Oil for frying vadas Method : 1. Add 1 cup sooji  in a mixing bowl 2. Add 3/4 cup curd in sooji 3. Now stir to blend the curd in sooji 4. Add 1 inch finely chopped ginger, 2 finely chopped green chillies, 1 tsp salt 5. Add 1/2 cup water and mix everything very well 6. If the batter is thick, add little water and mix well 7. The consistency of the batter should be same as required for making urad dal vadas 8. Cover and keep the batter aside for 10 to 15 minutes to set and then we will make vadas 9. After 10 minutes mix it to check the consistency. Sukhi Arbi Masala Fry Ingredients: Arbi - 500 gm Oil - 4 tbsp Ajwain - 1 tsp Coriander powder - 2 tsp Red Chilli powder - 1 tsp Amchur powder - 1 tsp Method : 1. Wash arbi nicely to remove all the mud and dirt 2. Boil it in cooker with enough water for 2-3 whistles 3. Let the boiled arbi cool 4. Peel the arbi 5.  Lightly press the arbi between your palms and flatten it 6. Heat oil in a kadahi or pan 7. Add ajwain and let it crackle 8. Add coriander powder, red chilli powder and lower the heat 9. Now add the flattened arbi in the pan one by one, spreading them in the pan  10. Add salt and flip the arbi pieces gently to coat them with spices 11. Let the arbi cook on low medium heat for a while 12. Flip it to cook it from other side as well 13. Keep cooking till it becomes crispy from both sides 14. Lauki Chana Dal / Ghiya Chana Dal / Doodhi Chana Dal | लौकी चना दाल / दूधी चना दाल / घीया चना दाल

Lauki Chana Dal Ingredients : Chana Dal - 1 cup Salt - 1.5 tsp or as per taste Turmeric powder - 1/2 tsp Ginger (finely chopped) - 1 tsp Ghee - 2 tsp Cumin seeds - 3/4 tsp Bay leaves - 2 Hing (asafoetida) - 1/4 tsp Tomato (grated) - 1/3 cup Green chillies (slit) - 2-3 Garam masala powder - 1/2 tsp Coriander powder - 2 tsp Red chilli powder - 3/4 tsp Lauki (bottle gourd) - 2 cups (peeled and cut into small pieces) Coriander leaves for garnishing Method : 1. Wash chana dal 2-3 times nicely with water 2. Soak the washed chana dal in enough water for 30 minutes 3. Remove dal from water and add it in a Pressure cooker 4. Mango Chunda/Sweet Pickle / Kuchla Ingredients: Raw Mango - 1 kg Salt - 2 tbsp Hing ( Asafoetida) - 1/2 tsp Big Cardamom - 4 Cloves - 8 Cumin seeds -  1 tsp Black Pepper - 1/2 tsp Cinnamon - 1" piece Fennel seeds - 1 tbsp Red Chilli Powder - 1 tbsp Jaggery - 1/2 kg Method: 1. Peel the mangoes 2. Grate the mangoes 3. Add Hing and salt to the grated mangoes 4. Mix it with a clean and dry spoon and cover it with a muslin cloth 5. Keep it in sun for 2 days (Do mix it once a day with a clean and dry spoon) 6. Grind Big Cardamom, cloves, cumin seeds, black pepper, fennel seeds and cinnamon to a coarse powder 7. After 2 days, add  grounded powder and red chilli powder  8. Mix well with a clean and dry spoon  9. Add jaggery 10. Mix well with a clean and dry spoon  11. Cover it with a muslin cloth and keep it in sun for 2 more days 12.
