Veg Yoghurt Sandwich (3 Styles - Tawa, Grilled, Cold)

Yoghurt Sandwich Ingredients: Bread Slices - 8 Hung Yoghurt - 1/2 cup Salt - 1/2 tsp Garlic cloves - 2 (minced) Black pepper crushed - 1/2 tsp Red chili flakes - 1/2 tsp Green chilly (chopped) - 1 Coriander (finely chopped) - 4 tbsp Butter - 3 tbsp Virgin Olive oil - 2 tsp Carrots (grated) - 1/2 cup Onion (finely chopped) - 1/2 cup Green capsicum (finely chopped) - 1/2 cup Tomato (deseeded finely chopped) - 1/2 cup Method: 1. In a mixing bowl add onion, tomato, capsicum, carrot, green coriander 2. Add garlic, green chili and mix nicely 3. Add hung curd, salt, black pepper, red chili flakes, olive oil 4. Mix all the ingredients nicely TAWA YOGHURT SANDWICH 5. Butter 2 bread slices from both sides  6. Toast them on griddle / Tawa till they turn golden from both sides 7. Scoop off 1 tbsp filling on one toasted bread and spread it all over 8. Cover with the second toasted bread and press down 9. पालक भुर्जी | Palak Bhurji | Scrambled Spinach

Palak Bhurji Ingredients: Spinach / Palak (chopped) - 1/2 kg Garlic (finely chopped) - 1 tbsp Ginger (grated) - 1 tbsp Green chilies (finely chopped) - 1 tsp Onion (thinly sliced) - 1 cup Mustard oil - 1 tbsp Cumin seeds - 1 tsp Whole dry red chilies - 3 Salt - 1/2 tsp or as per taste Coriander powder - 1 tbsp Amchur powder - 1 tsp Method: 1. Heat oil in a kadahi 2. Add cumin seeds, dry red chilies, garlic 3. Cook till garlic is slightly brown 4. Add grated ginger, green chilies, onion and cook on medium heat 5. Cook till onions acquire slight color 6. Add chopped spinach / palak 7. Add salt, coriander powder, amchur powder and mix 8. Cover and simmer for 4-5 minutes 9. Open and cook on medium flame for 1-2 minutes to concentrate flavors 10. Make sure the bhurji does not get completely dry 11. Serve with Dal, Roti and have a nutritious meal

Rajasthani Mirchi Vada   Ingredients : Green Chillies (large sized) - 6 (250 gm) Potato (boiled) - 250 gms Besan - 1.5 cups Green chillies (finely chopped) - 2 tsp Ginger (grated) - 1 tbsp Red chilli powder - 1/2 tsp Hing - 1/4 tsp Green coriander (finely chopped) - 2 tbsp Turmeric powder - 1 tsp Coriander powder - 1 tsp Cumin seeds - 1/2 tsp Ajwain (carom seeds) - 1/2 tsp Amchur powder - 1/2 tsp Salt - 1 tsp or as per taste Garam masala - 1/2 tsp Oil for frying Method : 1. Take besan in a bowl and add some water to it. Mix it nicely making sure no lumps are formed 2. Add some more water to it for making smooth texture batter having pouring consistency like pakoda batter 3. Add 1/2 tsp salt, 1/2 tsp turmeric powder, ajwain, red chilli powder 4. मखाना रेवड़ी | Makhana Revdi - Makhana Peanut Til Jaggery Caramel

Makhana Revdi Ingredients: Makhana / Lotus seeds - 100 gm Peanuts - 1/2 cup Sesame seeds /Til - 1/2 cup Jaggery - 200 gm Desi ghee - 1 tsp Cardamom powder - 1 tsp Dry ginger powder - 1/2 tsp Black pepper powder - 1/2 tsp Baking Soda - a pinch Method: 1. Roast makhana in a pan on medium heat till they turn light brown and crispy 2. Take them out and let them cool 3. Roast peanuts on low flame till they turn light brown 4. Let them cool a bit and then rub between your palms to remove the peels 5. Coarsely grind the peanuts using mortar and pestle 6. Dry roast sesame seeds on low flame till they turn light golden 7. Take them out and let them cool 8. Cut jaggery into small pieces and put it to a pan  9. Cook on a low flame and add 4 tbsp water to make syrup 10. Amla Kachhi Haldi Thecha  Ingredients: Amla -250 gm Fresh Turmeric - 100 gm Oil - 2 tbsp  Cumin seeds - 1 tsp  Hing - 1/2 tsp  Garlic - 8 cloves  Salt as per taste  Green Chilies - 8 or as per taste  Peanuts - 1 cup  Green coriander (finely chopped) - 1 cup Lemon juice - 1 tbsp  Method: 1. Cut amla into small pieces and deseed it  2. Peel fresh Turmeric, wash and chop it  3. Heat oil in a pan. Add cumin seeds, hing  4. When the cumin crackles, add garlic cloves, chopped amla, fresh Turmeric. 5. Sprinkle salt, 1 tbsp water, cover and let it saute on slow to medium flame until the amla is soft  6. Once amla is soft, mix in fresh green Chilies and peanuts  7. Cook for another 7-8 minutes, stirring occasionally. 8. Turn off the heat, toss in a cup of fresh coriander and mix everything well  9. Broccoli Stir Fry with Almonds Ingredients : Broccoli florets minced - 2.5 cups Onion (finely chopped) - 3/4 cup Oil - 2 tbsp Curry leaves - 8-10 Green chilli (slit) - 1 Cumin seeds - 1/4 tsp Mustard seeds - 1/8 tsp Ginger garlic paste - 1 tsp Red chilli powder - 1/3 tsp Garam masala powder - 3/4 tsp Almonds (blanched) - 20 Salt - 1 tsp Lemon Juice - 1 tbsp Method: 1. Heat oil in a pan 2. Add cumin seeds and mustard seeds 3. Add curry leaves and fry 4. Add chopped onions and fry till they are lightly golden  5. Add ginger garlic paste and fry till the raw smell disappears 6. Add broccoli florets , salt and fry for 2-3 minutes 7. Add red chilli powder, garam masala powder and stir well 8. Cover and cook for 2-3 minutes 9. Make a fine paste of almonds by adding liitle water 10. Pour almond paste in the pan  11. Stir fry for 2-3 minutes or till it becomes fragrant and cooked 12. MSG FREE Maggie Masala Ingredients: Coriander seeds - 1 tbsp Cumin seeds - 1 tbsp Fennel seeds - 1 tbsp Black peppercorns - 1 tbsp Dry red chilies - 3 Cloves - 2 Cinnamon stick - 1 (1 inch) Black cardamom pods - 2 Turmeric powder - 1 tsp Red chili powder - 1 tsp Amchur powder - 1 tsp Garlic powder - 1 tsp Onion powder - 1 tsp Powdered sugar - 1 tsp Salt - 1 tsp or as per taste Method: 1. Heat a pan and add coriander seeds, cumin seeds, fennel seeds and dry roast them 2. Transfer to a plate 3. In the same pan, add black peppercorns, dry red chilies, cloves, cinnamon stick, black cardamom pods 4. Roast them gently stirring frequently until fragrant. Don't burn them 5. Spread the spices in a plate and allow them to cool down 6. Grind the dry roasted seeds into a fine powder, take them out and let it cool 7.
