Shahi Paneer | शाही पनीर

Shahi Paneer Ingredients: Paneer (Cottage Cheese) - 250 gms (Cut into cubes) Ghee - 3 tbsp Onion - 1 (Chopped) Ginger -  ½" piece (Chopped) Green Chilli - 1 (chopped) Tomato - 4 (chopped) Black Cardamom - 2 (crushed) Bay Leaf - 1 Cinnamon - 1" piece Cloves - 4 Cashewnuts -  ½  cup Beaten curd -  1 ⁄ 4  Cup  Salt - 1 tsp or as per taste Red Chilli Powder -  ½ t sp Garam Masala Powder -  1 ⁄ 4   tsp Tomato Sauce - 1 tbsp Milk or  Thin Cream -  ½ cup Kasoor Methi - 1 tsp Coriander leaves for garnishing Method: 1. Heat 2 tbsp ghee in a pan 2. Add bay leaf, cinnamon, cloves and saute for a while 3. Add Onion, ginger, green chilli and crushed Cardamom 4. Cook until onion turns light brown 5. Add tomatoes, kasori methi, cashews and stir 6.  Cook covered on low flame for 7-8 minute 7. Add Curd. Cook for 3-4 minutes.  8. Remove from fire and let it cool 9. Ice cream With Jaggery | आइस क्रीम गुड़ वाली

Ice Cream with Jaggery Ingredients : Milk - 5 cups (1litre) Jaggery - 1 cup Cornflour - 4 tbsp Milk powder - 4 tbsp Cream (Malai) - 1 cup Almonds (peeled and chopped) - 2  tbsp. Pistachios (chopped) - 2 tbsp Green Cardamom powder - 1 tsp Method : 1.  In a small mixing bowl take milk powder, then add cornflour and mix well with a spoon. 2. Add 1/2 cup milk and whisk it well so that there are no lumps. 3. Keep it aside 4. In a sauce pan, bring remaining milk to boil 5. Now add  milk powder mixture and keep cooking until it becomes slightly thick and coats the laddle  6. Now add  jaggery  and mix well until jaggery completely dissolves 7. Switch off the flame and set aside to cool. 8. Once completely cool, beat it in a mixer to form a smooth mixture 9. Now add cream and mix in a mixer 10. Baked Green Paneer | Baked Hara Paneer | बेक्ड हरा पनीर

Baked Green Paneer Ingredients : Paneer (Cottage cheese) - 400 gm Green Coriander - 250 gm Mint leaves - 100 gm Ginger (chopped) - 1" piece Green Chillies (chopped) - 8-10 Salt - 1.5 tsp or as per taste Green Cardamom - 3 Cloves - 3 Cinnamon Stick - 1" piece Oil - 1 tbsp Lemon Juice - 2 tbsp Peanuts - 1 cup Tomatoes (cut into roundels) - 4 Method : 1. Dry roast peanuts till it becomes slightly brown and crispy 2. Let the peanuts cool 3. Using your palms rub peanuts and try to remove the peels as much as you can 4. Wash and chop coriander leaves roughly 5.  Cut the paneer into 1" X 1" pieces  6.  Add 3/4 tsp salt and lemon juice to the paneer pieces and toss it  7.  Keep the paneer aside for 20 minutes 8.  Grind cardamom, cloves, cinnamon 9.  Grind coriander leaves, mint leaves, ginger, green chillies and roasted peanuts with the peels removed 10. Mango Lassi  Ingredients : Ripe mangoes -  3 to 4  Curd (chilled) - 2 cups Milk - 1/2 cup  (optional) Sugar - 4 tbsp Green cardamom powder - 1/2 tsp Saffron strands - 8-10 Pistachios (chopped) - 1 tbsp Mint leaves (for garnish) Almonds (chopped) - 1 tbsp Method : 1. Rinse, peel and chop the mangoes (about 2 cups of chopped mangoes).  2. Add the chopped mangoes in a blender. (leave 1 tbsp chopped mangoes aside) 3. Add sugar and  cardamom powder 5. Blend everything until smooth. The consistency is pulpy and mushy without any fine chunks of mangoes. 6. Add curd  (dahi)  or yogurt.  7. If you want a slightly thin consistency, add some milk to the lassi  8. Blend until all the ingredients are mixed evenly and the yogurt has become smooth 9. Pour mango lassi in glasses. 10. Garnish with saffron and pistachios / garnish with mint leaves / garnish with sliced almonds / garnish with mango chunks. 11. Serve straightaway.
