Falahari Rajgira Dahi Vada
Ingredients:

Method:
🥣 1. Prepare the Flavored Yogurt
In a mixing bowl, add:

Yogurt (curd)

½ tsp rock salt

¼ tsp red chilli powder
-
½ tsp roasted cumin powder

1 finely chopped green chilli
🌀 2. Whisk the Yogurt
Whisk everything together until the yogurt is smooth and well combined. Set aside.
🥔 3. Mash the Potato
Take one boiled potato and mash it well until lump-free.
🌾🌶️ 4. Make the Pakora Batter
To the mashed potato, add:

Rajgira atta (amaranth flour)

1 finely chopped green chilli

¼ tsp red chilli powder
-
½ tsp rock salt
💧🌀 5. Mix & Add Water Gradually
Mix everything nicely and then gradually add water to form a very thick batter.
🔥🍳 6. Heat the Oil
Heat oil in a kadahi or deep pan for frying the pakoris.
🍥🥄 7. Fry the Pakoris
Drop small portions of the batter into hot oil.
🍽️✨ 8. Cook Until Golden
Fry on medium heat until the pakoris turn crispy and golden brown.
🧻🛑 9. Drain & Cool
Remove the pakoris onto a plate lined with absorbent paper.
Let them cool slightly.
🥣➕🍥 10. Combine Pakoris with Yogurt
Add the cooled pakoris into the prepared yogurt mixture.
🔄🧁 11. Mix Gently
Gently mix so the pakoris are well coated but not broken.
🌶️✨ 12. Garnish & Serve
Garnish with a pinch of roasted cumin powder and red chilli powder.
Serve chilled or at room temperature.
