Minty Fresh Pudina Rice



📝 Ingredients for Pudina Rice đŸŒŋ🍚

  • 🍚 Cooked Rice – 1 cup

  • đŸŒŋ Fresh Pudina (Mint) Leaves – 1 cup

  • 🧅 Onion (sliced) – 1

  • đŸŒļ️ Green Chilies – 2

  • đŸĢš Ginger – 1 inch piece

  • 🧄 Garlic Cloves – 2

  • 🌱 Cumin Seeds – 1 tsp

  • đŸ›ĸ️ Oil / Ghee – 2 tbsp

  • 🧂 Salt – to taste

  • đŸĨœ Cashews – 8–10

Method:

🧄đŸŒŋ Make the Mint Paste

  1. In a blender, combine:

    • đŸŒŋ Mint leaves

    • đŸŒļ️ Green chillies

    • đŸĢš Ginger

    • 🧄 Garlic

  2. Blend into a smooth paste using a little water if needed. Set aside.

đŸŗ Prepare the Tempering

  1. Heat oil or ghee in a pan over medium heat.

  2. Add the cashews and fry until they turn light golden brown.

  3. Remove and set them aside for garnishing.

🌱 SautÊ the Base

  1. In the same pan, add cumin seeds and let them crackle.

  2. Add the sliced onions and sautÊ until golden brown and caramelized.

🍃 Cook the Mint Masala

  1. Add the prepared mint paste to the pan.

  2. Cook for 2–3 minutes on medium heat until the raw smell goes away.

🍚 Mix in the Rice

  1. Add the cooked rice to the pan.

  2. Sprinkle salt to taste and mix everything gently until well combined.

đŸĨœ Garnish & Serve

  1. Garnish the Pudina Rice with the fried cashews.

  2. Serve hot with raita, papad, or a simple curry of your choice!




Pudina Rice is a South Indian dishmade with fresh pudina leaves, spices and rice. It is an easy and quick preparation which beautifully goes with papad and raita, making it a versatile dish for casual dinners or lunchboxes.
