Minty Fresh Pudina Rice



๐Ÿ“ Ingredients for Pudina Rice ๐ŸŒฟ๐Ÿš

  • ๐Ÿš Cooked Rice – 1 cup

  • ๐ŸŒฟ Fresh Pudina (Mint) Leaves – 1 cup

  • ๐Ÿง… Onion (sliced) – 1

  • ๐ŸŒถ️ Green Chilies – 2

  • ๐Ÿซš Ginger – 1 inch piece

  • ๐Ÿง„ Garlic Cloves – 2

  • ๐ŸŒฑ Cumin Seeds – 1 tsp

  • ๐Ÿ›ข️ Oil / Ghee – 2 tbsp

  • ๐Ÿง‚ Salt – to taste

  • ๐Ÿฅœ Cashews – 8–10

Method:

๐Ÿง„๐ŸŒฟ Make the Mint Paste

  1. In a blender, combine:

    • ๐ŸŒฟ Mint leaves

    • ๐ŸŒถ️ Green chillies

    • ๐Ÿซš Ginger

    • ๐Ÿง„ Garlic

  2. Blend into a smooth paste using a little water if needed. Set aside.

๐Ÿณ Prepare the Tempering

  1. Heat oil or ghee in a pan over medium heat.

  2. Add the cashews and fry until they turn light golden brown.

  3. Remove and set them aside for garnishing.

๐ŸŒฑ Sautรฉ the Base

  1. In the same pan, add cumin seeds and let them crackle.

  2. Add the sliced onions and sautรฉ until golden brown and caramelized.

๐Ÿƒ Cook the Mint Masala

  1. Add the prepared mint paste to the pan.

  2. Cook for 2–3 minutes on medium heat until the raw smell goes away.

๐Ÿš Mix in the Rice

  1. Add the cooked rice to the pan.

  2. Sprinkle salt to taste and mix everything gently until well combined.

๐Ÿฅœ Garnish & Serve

  1. Garnish the Pudina Rice with the fried cashews.

  2. Serve hot with raita, papad, or a simple curry of your choice!




Pudina Rice is a South Indian dishmade with fresh pudina leaves, spices and rice. It is an easy and quick preparation which beautifully goes with papad and raita, making it a versatile dish for casual dinners or lunchboxes.
