Dhaba Style Kathiyawadi Vaghareli Masala Khichdi, Gujarati Recipe

Kathiyawadi Masala Khichdi



Ingredients:

Rice - ½ cup
Toor (Arhar) dal - ¼ cup
Chilka moong dal (Green) - ¼ cup
Masoor dal - 1 tbsp
Peas - ¼ cup
Carrot (Cube) - ¼ cup
Potato (cube) - ¼ cup
Turmeric powder - 1.5 tsp
Peanuts - ¼ cup
Salt - 1.5 tsp or as per taste
Garlic cloves - 8 to 10
Ginger - 1 inch
Kashmiri red chilli powder - 1.5 tbsp
Ghee - 2 tbsp 
Oil - 2 tbsp 
Mustard seeds - ½ tsp 
Curry leaves 
Cumin seeds - 1 tsp 
Dry Red chilli - 2 
Coriander powder - 1 tsp
Cumin powder - 1 tsp  
Onion (finely chopped) - 2 
Tomato (finely chopped) - 2
Green Coriander (chopped) 

Method:

1. Wash and soak rice, toor dal, moong dal, masoor dal for 10 minutes
2. In a cooker add drained rice, toor dal, moong dal, masoor dal, peas, carrot, potato, turmeric powder, peanuts, salt
3. Mix very nicely
4. Add 4 cups of hot water and give a nice mix
5. Close the lid of the cooker and cook for 3 whistles on high flame, 5 minutes on low flame
6. In a mortar take garlic cloves, ginger, kashmiri red chilli powder, 1/4 tsp salt
7. Pound it to get a coarse mixture
8. Let the pressure of cooker release on its own and then open the lid
9. Add some water and let it cook on low flame
10. In a separate pan heat 2 tbsp oil
10. Add mustard seeds and let them crackle nicely
11. Add cumin seeds, curry leaves, whole red chilli, prepared lehsun ka chutney and mix nicely
12. Add chopped onion, tomato, coriander powder, cumin powder, 1/2 tbsp kashmiri red chilli powder, 1/4 tsp turmeric powder, coriander leaves and saute it very nicely
13. Add 2 tbsp water and mix
14. Add 1/4 tsp salt and mix
15. Cook till oil separates
16. Add this Vaghar to the khichdi and give a nice mix
17. Serve this delicious Vaghareli Masala Khichdi garnished with green coriander and a dollop of ghee
