Beetroot Carrot Raita | चुकंदर गाजर रायता

Beetroot Carrot   Raita Ingredients: Curd / Yogurt -2 cups Beetroot (peeled and grated) - 1/2 cup Carrot (peeled and grated) -  1/2 cup  Onion (Finely chopped) - 1/4 cup Capsicum (Finely chopped) - 1/4 cup Roasted cumin powder -1/2   tsp Coriander leaves (Chopped) - 1 tbsp Black salt - 1/2 tsp Salt   - 1/2 tsp Method: 1. Whisk the curd till smooth 2. Add beetroot, carrot, onion, capsicum and mix well 3. Add salt, black salt, cumin powder and mix well 4. Keep it in refrigerator to cool it 5. Masaledar Aloo Do Pyaza (Dry) Ingredients: Potato - 500 gram (Medium size) Small onions (Shallots)- 250 gram Medium Size onion - 1 (finely chopped) Curd / Yogurt - 1 cup Cinnamon - 2" stick Black Pepper - 1 tsp Cloves - 8 Big Cardamom - 4 Coriander Seeds - 4 tsp Whole Red Chilli - 2 Cumin Seeds - 1 tsp Red Chilli powder - 1/2 tsp Salt - 1 tsp Oil - 4 tbsp Coriander leaves (finely chopped) - 1 tbsp Method: 1. Grind the medium size onion to a paste 2. Coarsely grind the coriander seeds 3. Peel the potatoes and cut each potato into 4 pieces. Peel the small onions. 4. Heat Oil in a pan 5. Add cumin seeds, cinnamon, black pepper, cloves, cardamom, whole red chilli in oil and stir it lightly 6. Now add potato in the pan and fry it for 2 minutes 7. Masala Chaach Ingredients: Coriander leaves (roughly chopped) - 2 tbsp Mint leaves (roughly chopped) - 2 tbsp Ginger (roughly chopped) - 1/2 tbsp Green chilli - 1 (chopped) Curd - 1 cup Water - 1 glass Salt - 1/2 tsp Black salt - 1/2 tsp Roasted Cumin powder - 1/2 tsp Chat masala - 1/4 tsp Method: 1. Add curd, coriander leaves, mint leaves, ginger, green chilli in a blender 2. Blend all the ingredients. 3. Add 1 cup water in the blended mixture 4. Sieve the blended mixture to get a smooth texture 5. In the chaach add salt, black salt, cumin powder, chat masala and mix well 6. For serving add ice cubes in a glass and pour the prepared chaach 7. Garnish with mint leaves and serve it immediately 8. Masala Chaach aids in digestion, is a great tool against dehydration and helps caim the stomach after a spicy meal 9. Falahari Sweet Mango Raita | Aam Ka Raita  Ingredients: Curd / Yogurt -2 cups Sugar - 2  tbsp Ripe Mangoes (diced) - 1 cup Green Cardamom Powder - 1 tsp Saffron (Kesar) - 1/4 tsp Almonds (chopped) - 1 tbsp Method: 1. Add sugar and beat the curd till smooth 2. Add mangoes (reserve a few for garnish), cardamom powder and saffron and mix well 3. Chill the mango raita before serving 4. Garnish with chopped mangoes, chopped almonds 5. Crispy Karela Fry without Onion Ingredients: Bitter Gourd(Karela) - 250 gm Turmeric powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Roasted Cumin powder - 1/2 tsp Coriander powder - 1 tsp Fennel (Saunf) Powder - 1 tsp Garam Masala powder - 1/4 tsp Hing (Asafoetida) - 1/4 tsp Amchur Powder - 1 tsp Gram Flour (Besan) - 1 tbsp Mustard Oil - 2 tbsp Salt - 1/2 tsp Method: 1. Lightly scrap the karelas 2. Wash them and cut them in thin rings. 3. If there are hard seeds in the karelas, remove them 4. Heat Oil in a pan 5. Add the karela slices and saute on medium flame till the slices become lightly browned. 6. Keep stirring in between 7. Now add turmeric powder, red chilli powder, cumin powder, coriander powder, fennel powder, garam masala powder, hing, amchur powder, salt and mix well 8. Carrot  Raita | Gajar Raita Ingredients: Curd / Yogurt - 1 cup Carrot (peeled and grated) - 1/2 cup Coriander leaves (finely chopped)   - 1 tbsp Mint leaves (finely chopped)   - 1 tbsp Green Chilly (finely chopped) - 1 Roasted Cumin Powder - 1/2 tsp Black Salt   - 1/2 tsp Desi ghee - 1/2 tsp Hing (Asafoetida) - a pinch Method : 1. Whisk curd in a bowl 2. Add the grated carrots (reserve 1 tsp for garnish) 3. Add the chopped green chilly, chopped mint leaves and mix well 4. Add cumin powder, black salt and mix well 5. In a small pan heat ghee 6. Add hing and fry hing for few seconds 7. Pour the tempering on raita and mix well 8. Chill the carrot raita in refrigerator 9. Garnish the raita with grated carrots and coriander leaves 10. Bel Sharbat | Wood Apple Juice Ingredients: Bel Fruit - 1 Black Salt - 3/4 tsp Roasted Cumin Powder- 3/4 tsp Sugar - 4 tbsp Method: 1. Slightly hammer Bel fruit along one of the circumference by rotating it slowly. Cut it into two parts 2. Using a spoon extract the pulp from it. 3. Soak the pulp in 4 cups of water for about 2 hours. 4. Mesh the pulp in water properly with hand. Don’t use mixer, as it will crush the seeds making the juice bitter. 5. Sieve the pulp to remove fibers and seeds. 6. Add little more water in the sieve and extract the remaining pulp from the fiber and seeds of the sieve 7. Now we have the smooth bel fruit extract 8. Add sugar, black salt, 1/2 tsp jeera powder in the juice and mix till the sugar dissolves 9. Keep it in refrigerator to cool 10. Veg Russian Salad | Olivier Salad Ingredients: Cabbage (Finely Chopped)- 1/2 cup Potato (Chopped)- 1/2 cup Carrot (Chopped)- 1/2 cup Green Capsicum (Chopped)- 1/2 cup French beans (Chopped)- 1/4 cup Peas - 1/4 cup Sweet Corn - 1/4 cup Apple (Chopped) - 1 Cucumber (Chopped)- 1 Veg Mayonnaise - 3 tbsp Cream - 1 tbsp Sugar - 1 tsp Salt - 1 tsp Black Pepper powder - 1/2 tsp Pomegranate seeds - 2 tbsp Method: 1. To steam the vegetables, boil water in a vessel 2. Place french beans, peas, sweet corn, carrot and potato on a colander 3. Now place the colander on the vessel 4. Cover it and let the vegetables cook in steam 5. After 5 minutes stir the vegetables and again cover and cook 6. Steam the vegetables for about 15 minutes or till potato is cooked 7.
