Chaach Ke Aloo | Buttermilk Potatoes Ingredients: Potato (boiled and peeled) - 500 gm Buttermilk (Chaach) - 500gm Desi Ghee - 2 tbsp Cumin Seeds - 1/2 tsp Fenugreek Seeds - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Salt - 1 tsp Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Coriander leaves (finely chopped) - 1 tbsp Method: 1. Break the boiled potatoes into pieces 2. Take buttermilk in a bowl and add salt, turmeric powder, red chilli powder in it. 3. Mix the masalas nicely in the buttermilk 4. Heat ghee in a pan 5. Add fenugreek seeds, cumin seeds and hing and let them splutter 6. Add potato pieces and stir fry them 7. Fry the potatoes till they become light brown 8. Now add the buttermilk mixture in the potatoes 9. Let the gravy boil 10. When the gravy starts boiling lower the flame and cook for 10 minutes 11. Karela Peels Fry | Karela Ke Chilkon Ki Sabji Ingredients: Karela (Bitter Gourd) Peels of 250 gm Karela Onion - 1/2 cup (Chopped finely lengthwise) Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Salt - 1 tsp Saunf (Fennel) Powder - 1 tsp Red Chilli Powder - 1/2 tsp Amchur Powder - 1 tsp Mustard Oil - 1 tbsp Method: 1. Add 1/2 tsp salt in the karela peels and mix. Keep it aside for half an hour 2. Now squeeze out the salt and water from the peels of karelas 3. Chop the peels to small size 4. Heat Oil in a pan 5. Add Onions in the pan now and cook until onions turn golden brown 6. Add karela peels in it now 7. Now mix onions and karela peels on low flame 8. Karela Do Pyaza Ingredients: Karela (Bitter Gourd) - 250 gm Onion - 250 gm (Chopped finely lengthwise) Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Salt - 1 tsp Saunf (Fennel) Powder - 2 tsp Red Chilli Powder - 1/2 tsp Amchur Powder - 1 tsp Mustard Oil - 2 tbsp Method: 1. Lightly scrap the karelas 2. Wash them and cut them in thin rings 3. If there are hard seeds in the karelas, remove them 4. Add 1/2 tsp salt in it and mix. Keep it aside for half an hour 5. Now squeeze out the salt and water from the pieces of karelas 6. Heat Oil in a pan 7. Fry karela rings in oil 8. Keep stirring the karelas in between 9.
