Aloo Masala Poori | Potato Masala Poori

Aloo Masala Poori Ingredients: Whole wheat flour - 2 cups Sooji - 2 cups Potato (boiled) - 4 (medium size) Red chili flakes - 2 tsp Kasoori Methi - 1 tsp Turmeric powder - 1 tsp Roasted cumin powder - 1 tsp Ajwain - 1 tsp Salt as per taste Coriander leaves (finely chopped) - 1 cup Oil - 4 tsp Oil for frying  Method: 1. In a mixing bowl add 2 cup sooji and 2 cup very hot water 2. Mix it nicely using a spoon  3. Cover it and keep it aside for 10 minutes 4. After 10 minutes add boiled and mashed 4 potatoes, 2 cup wheat flour, red chili flakes, kasoori methi, turmeric powder, cumin powder, ajwain, salt, coriander leaves, 4 tsp oil 5. Mix all the ingredients and make a dough without adding water 6. Apply little oil on your palms and make small balls from the prepared dough 7. Heat oil in a kadahi to fry pooris 8. Masoor Dal Pakoda Ingredients: Red Masoor Dal - 1.5 cup Ginger - 1 inch Green chili - 5 Salt as per taste Ajwain - a pinch Turmeric powder - 1/2 tsp Red chilli powder - 1/2 tsp Garam masala powder - 1/2 tsp Rice flour - 2 tbsp Oil for frying Method: 1. Wash dal nicely and soak in water for 3 hours 2. In a blender add soaked dal, ginger, green chilies, salt and grind it coarsely without adding water 3. Take it out in a mixing bowl 4. Add ajwain, turmeric powder, red chili powder, garam masala powder, rice flour 5. Mix nicely 6. Heat oil in a kadahi to fry pakoras 7. Now change the flame to medium and drop small pakodas made from the batter in the oil 8. Fry them till they turn golden brown from all sides 9. Take them out in a plate lined with kitchen paper 10. Serve it hot with green chutney

Kharbuje (Musk melon) ki Khatti Meethi Sabji Ingredients: Kharbuja (cut in cubes) - 2 cups Oil - 2 tbsp Turmeric powder - 1/2 tsp Cumin seeds - 1/2 tsp  Salt - 1/4 tsp Black salt - 1/4 tsp Green chilies (chopped) -2  Coriander powder - 1/2 tsp  Red chili flakes - 1/4 tsp Red chili powder - 1/4 tsp Sugar - 1 tbsp Lemon - 1 tbsp Method: 1. Heat oil in a kadahi 2. Add cumin seeds and let them crackle 3. Add kharbuja cubes, turmeric powder, salt, black salt 4. Mix nicely 5. Cover and cook on low heat without adding any water. Kharbuja will release its own water 6. Cook for 3-4 minutes stirring in between 7. Add chopped green chilies, cover and cook for 3-4 minutes 8. If you want more gravy, then you can add some water and cook 9. Add coriander powder, red chili flakes, red chili powder and mix 10. Add sugar, lemon juice and mix 11. Switch off the flame 12. Sattu Ka Cheela Ingredients: Sattu - 6 tbsp Besan - 4 tsp Turmeric powder - 1 tsp Salt - 3/4 tsp or as per taste Pepper powder - 3/4 tsp Onion (chopped) - 1 Garlic cloves - 3 Lemon juice - 1 tsp Curd - 2 tbsp Ajwain - 1/2 tsp Method: 1. In a mixing bowl add sattu, besan, salt, pepper powder, turmeric powder, ajwain 2. Now add finely chopped onion, finely chopped garlic, curd 3. Using water or buttermilk make a batter for cheela 4. Add lemon juice and mix 5. Heat a nonstick tawa 6. Brush with little oil and lower the flame 7. Put 2 ladles of batter in the center and spread it using back of ladle 8. Change the flame to medium. Apply oil and cook from both sides 9. When it is golden brown in colour take it out in a plate 10. Serve it with green chutney or ketchup

Vegetable Mangodi Tahiri Ingredients: Basmati rice - 2 cups Mangodi - 1 cup Green Peas - 3/4 cup Potato (Cut in big pieces) - 1 cup Onion (thinly sliced) - 1 cup Ginger (grated) - 1 tbsp Green chillies (slit) - 2 Desi ghee - 3 tbsp Turmeric powder - 1/2 tsp Red chilli powder - 1/2 tsp Garam masala - 1 tsp Cumin seeds - 1 tsp Bay leaf - 1 Cloves - 6-7 Cinnamon stick - 1/2 " Black Cardamom - 2 Salt as per taste Method: 1. Rinse the rice in clean water 3-4 times  2. Soak the rice in water for 20 minutes 3. In a pressure cooker add 2 tbsp ghee 4. Add the mangodi and shallow fry them on low heat 5. When they have turned golden brown take them out in a plate  6. In the same cooker add 1 tbsp ghee 7. Add cumin seeds, bay leaf, cinnamon stick, cardamom, cloves 8. Saute for few seconds 9. Vegan No Sugar Mango Ice Cream   Ingredients: Makhana - 1 cup Dates - 6-7 Cashew nuts - 1/2 cup Raisins - 1/3 cup Mangoes (chopped and frozen) - 3 (medium size)   Method: 1. Soak cashews, makhana, raisins, dates in 1 cup hot water for 1 hour 2. Remove seeds from dates and add it to the blender 3. Add the remaining soaked dry fruits in the blender 4. Blend it to make a paste 5. Add chopped frozen mango pieces of 2 mangoes and blend it to get a smooth puree 6. Transfer 1/2 quantity in a container that can be kept in a fridge 7. Spread 1/2 mango pieces over it  8. Add the remaining mixture over the mango pieces 9. Spread 1/2 mango pieces on the top 10. Cover and freeze for 8 hours 11. Ice cream is nicely set.  12. White Sauce Sandwich Ingredients: Bread Slices - 12 Onion (finely chopped) - 1/2 cup Carrot (grated) - 1/2 cup Yellow bell pepper - 1/2 cup Green bell pepper - 1/2 cup Red bell pepper - 1/2 cup Coriander leaves - 2 tbsp Milk - 2 cups Wheat flour - 2 tbsp Butter - 2 tbsp Oregano - 1/2 tsp Pepper powder - 1/2 tsp Salt to taste Method: 1. In a pan heat 1 tbsp butter 2. When it starts to melt add onion and fry till it turns translucent 3. Add carrot, yellow, green, red bell pepper, and cook for 1-2 minutes 4. Add wheat flour and mix 5. Add 1 tbsp butter and milk and keep stirring 6. Keep stirring until the mixture becomes slight thick and creamy. Cook in low flame. 7. Add salt, oregano, pepper powder and give a mix 8. Once the sauce is thick in spreadable consistency add coriander leaves, give a quick mix and switch off 9. Set aside to cool. 10.
