Coffee Ice Cream (No Eggs) Ingredients : Full Fat Milk - 500 ml (2.5 cups) Cornflour - 1 tbsp Sugar - 1/2 cup Instant Coffee powder - 1.5 tbsp Fresh Cream - 150 ml (3/4 cup) Method : 1. Combine the coffee and 1 tbsp hot water in a bowl, mix well and keep aside 2. Combine the cornflour and 100 ml (1/2 cup) milk in a bowl, mix well and keep aside 3. In a deep pan add 400 ml (2 cups) milk and sugar and cook it on medium flame 4. Stirring occassionally cook it for 12-15 minutes 5. Add the cornflour milk mixture and mix well 6. Cook on medium flame stirring continuously for 7-8 minutes or till the mixture starts sticking to the ladle 7. Add the coffee water mixture and mix well 8. Cook for 1 minute stirring continuously 9. Soya Matar Bhurji Ingredients: Soya Granules - 1 cup Onion  (finely chopped) - 3/4 cup  Tomato  (finely chopped) - 3/4 cup  Capsicum  (finely chopped)  - 1/2 cup Green peas (boiled) - 1/2 cup Green Chilli (finely chopped) - 1  Ginger  (finely chopped)  - 1 tsp  Salt - 1 tsp or as per taste Turmeric powder - 1/4 tsp Red chilli powder - 1/2 tsp Garam masala powder - 1/4 tsp Lemon juice - 2 tsp Oil - 2 tbsp Coriander leaves  (finely chopped)  - 1 tsp  Method: 1. Broccoli Potato Stir Fry (Indian style) Ingredients : Potato (cubed) - 1 cup (1/2 inch pieces) Broccoli - 250 gm Oil - 2 tbsp Cumin seeds - 1/2 tsp Green chilli (chopped) -1 Garlic (chopped) - 1 tbsp  Turmeric powder - 1/8 tsp Red chilli powder - 1/4 tsp Garam masala powder - 1/2 tsp Cumin powder - 1/4 tsp Coriander powder - 1/4 tsp Salt - 3/4 tsp or as per taste Lemon Juice - 1 tbsp Sesame seeds (toasted) - 1 tsp Method : 1. Cut the broccoli florets to your preferrable size 2. Add them to warm water and leave for 2-3 minutes 3. Drain and set aside 4. Heat 1.5 tbsp oil in a pan and add cumin seeds 5. Cold Cucumber Soup Ingredients : Cucumbers - 500 gm Ginger (chopped) - 2 inch piece Green Chillies (chopped) - 2 Salt - 1 tsp or as per taste Buttermilk - 2 cups Black pepper powder - 1/2 tsp Lemon Juice - 1 tbsp Method : 1. Peel the cucumbers and cut into chunks 2. In a blender add cucumber chunks 3. Add ginger, green chillies, salt, butter milk and blend to a fine puree 4. Add black pepper powder, lemon juice and blend again 5. Pour into 2 soup bowls 6. Chill in a refrigerator for at least 30 minutes 7. Rice and Poha Dosa 🧾  Ingredients: Short grain rice - 1 cup Fenugreek seeds - 1/2 tsp Poha - 1/2 cup Salt - 1/2 tsp Oil for cooking Dosa Method: 🧼🍚 1. Wash the Rice Rinse the rice thoroughly under running water and drain completely . 🌱🍚 2. Add Fenugreek Seeds To the washed rice, add a few fenugreek seeds (methi dana) for flavor and better fermentation. 💦🕒 3. Bhindi with Onion Tomato Ingredients: Bhindi (Okra / Ladyfinger) - 500 gm Onion (chopped) - 1/2 cup Tomato (diced) - 1/2 cup Chat Masala - 1/2 tsp Black Pepper (crushed) - 1/4 tsp Salt - 1/2 tsp Mustard Oil - 1 tbsp Method : 1. Take water in a big vessel and wash bhindi nicely in this water 2. Take out bhindi from water and spread them on a clean kitchen towel 3. Leave them on the cloth for 10 minutes so that they dry nicely 4. Remove the ends of bhindi and chop the bhindi in desired shape 5. Heat Oil in a pan 6. Add chopped bhindi in it and toss it 7. Chocolate Walnut Fudge Ingredients : Semi sweet chocolate chips - 200 grams Condensed milk - 200 ml Salt - a pinch Baking Soda - a pinch Vanilla Essence - 1/2 tsp Walnuts (chopped) - 1/2 cup Method : 1. In a microwave safe bowl add chocolate chips 2. Add condensed milk, a pinch of salt, a pinch of baking soda, vanilla essence in it  3. Stir and mix well 4. Keep 1 litre water in a pan to boil 5. When the water starts boiling lower the flame to medium 6. Place the bowl with contents on the pan and cook the ingredients with double boiler method. 7.
