Ginger Soup | अदरक का सूप

Ginger Soup Ingredients: Ginger - 100 gm Lemon Juice - 2 tbsp Salt - 1 tsp Cumin Seeds - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Desi Ghee - 1 tsp Method: 1. Peel and wash Ginger 2. Chop ginger into small pieces  3. Grind these ginger pieces to a smooth paste using 1/2 cup water 4. Sieve this ginger paste 5. Use 1 cup water to sieve the ginger finely 6. Add 2  cup water to the ginger water  7. Heat ghee in a pan and add cumin seeds and hing 8. When it splutters add ginger water in it and let it boil 9. Add salt and lemon juice 10. Boil it for 4-5 minutes 11. Serve it piping hot in a winter evening for warmth  12. Raw Banana Savoury Balls Ingredients (Kofte): Raw Banana - 500 gm Besan - 2 tbsp Green Coriander - 1 tbsp (Finely chopped) Green Chilly - 3 (Finely chopped) Ginger - 1 tbsp (grated) Oil for frying Salt - 1/2 tsp Ingredients (Curry): Tomato - 4 (Chopped) Cashew Nut - 20 (soaked in water) Green Chilly - 2 (chopped) Ginger - 1" piece (chopped) Cream - 2 tbsp Oil - 2 tbsp Green coriander - 1 tbsp Coriander powder - 2 tsp Cumin Seeds - 1/2 tsp Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/4 tsp Garam Masala Powder - 1/4 tsp Hing (Asafoetida) - 1/4 tsp Salt - 1/2 tsp Method (Kofte): 1. Spinach Ginger Soup Ingredients: Fresh Spinach - 250 gm Ginger - 1 tbsp (grated) Green Chilly - 1 (chopped) Salt - 1 tsp Desi Ghee - 1 tsp Butter - 1 tbsp Cumin Seeds - 1/2 tsp Lemon Juice - 1 tbsp  Freshly crushed black pepper - 1/2 tsp Bread slice - 2 Method: 1. Remove crusts from bread slices 2. Brush bread on both sides with melted butter  3. Cut bread slices into small cubes 4. Arrange cubes on an ungreased tray  5. Bake at 175 C for 15 minutes or until browned 6. Take out the croutons from oven and keep aside 7. Rinse spinach very well in water 8. Chop the spinach leaves  9. Boil chopped spinach, ginger and green chilly with 1 cup water for 3 whistles 10. Let the boiled spinach cool 11. Blend the spinach to a smooth paste 12. Heat ghee in a pan 13. Tomato Ginger Soup Ingredients: Tomato - 500 gm Ginger - 50 gm Salt - 1 tsp Roasted Cumin Powder - 1 tsp Black Pepper Powder - 1/2 tsp Sugar - 2 tsp Method: 1. Wash tomatoes and cut each tomato to eight pieces 2. Peel and wash Ginger and grate it 3. Boil tomatoes and ginger with one cup water and salt for 3 whistles 4. Let the boiled tomatoes cool 5. Grind the boiled tomato mixture 6. Sieve the grinded tomatoes to get a smooth paste 7. Add 4 cup water in this paste and let it boil 8. When it starts boiling add cumin powder, black pepper powder, sugar and lower the flame 9. Let it cook on low flame for 5-6 minutes 10. Serve it hot in a  cold winter evening for warmth 11. Radish Savoury Balls |  Mooli Ke Kofte Ingredients: Radish - 500 gm Besan (Gram Flour) - 1/2 cup Green Chillies - 2 tsp (Finely chopped) Ginger - 2 tbsp (Grated) Salt - 1 tsp Tomato - 1 (Chopped) Hing (Asafoetida)- 1/4 tsp Cumin Seeds - 1/2 tsp Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Red Chilli Powder - 1/2 tsp Garam Masala Powder - 1/2 tsp Coriander Leaves - 2 tbsp (finely chopped) Oil - 2 tbsp Oil for frying Cream - 1 tbsp Method: 1. Peel radish 2. Wash and grate radish and set aside for 10 minutes 3. Squeeze out excess water from radish by pressing it between the palms 4. Malai Ladoo | Paneer Ladoo Ingredients: Full Cream Milk - 1 litre Lemon juice - 2 tbsp Powdered sugar (Boora) - 5 tbsp Cardamom Powder - 1/2 tsp Saffron strands - 7-8 Almonds - 6 Method: 1. Keep milk on fire to boil in a thick bottomed pan 2. When it comes to boil lower the flame 3. Now add 1 tbsp lemon juice and mix. 4. If the milk curdles, need not add rest of lemon juice, else add rest of the lemon juice and mix 5. After the milk is curdled simmer for 2 minutes 6. Strain the whey using muslin cloth and keep 1/3 portion of whey with the coagulated milk solids 7. On low flame, keep simmering the coagulated milk mixture with whey 8. Stir at intervals 9.
