Zero Oil Makhana Namkeen Ingredients : Makhana (foxnuts) - 2 cups Peanuts - 1/2 cup Cashew - 1/2 cup Almonds - 1/2 cup Walnuts - 1/2 cup Rock Salt (Sendha Namak) - 1/2 tsp or as per taste Black pepper powder - 1/2 tsp Method : 1. Preheat Air fryer for 2 minutes at 200 C 2. Add makhana in the basket and air fry for 4 minutes at 200 C 3. Take out the basket and shake it to give the makhanas a stir 4. Again air fry it for 3 minutes and check if the makhana is crisp and breaks easily 5. Take out the makhanas in a large bowl  6. Add peanuts, cashews, almonds, walnuts in the basket 7. Soothing Veg Atta Chilla Ingredients : Whole wheat flour (Atta) - 1 cup Sooji / Rava _ 1/2 cup Salt - 1 tsp or as per taste Tomato (deseeded finely chopped) - 1 cup Cucumber (grated) - 1 Potato (grated) - 1 Green chillies (finely chopped) - 2 Coriander powder - 1 tsp Turmeric powder - 1/2 tsp Coriander leaves (finely chopped) - 1/2 cup Oil for roasting Chillas Method : 1. Rava Medu Vada Ingredients : Rava / Suji - 1.5 cup Curd - 3/4 cup Green Coriander (finely chopped) - 2 tbsp Ginger (finely chopped) - 1 inch Green Chilly (finely chopped) - 2 Salt - 1 tsp or as per taste Baking Soda - a pinch Oil for frying vadas Method : 1. Sukhi Arbi Masala Fry Ingredients: Arbi - 500 gm Oil - 4 tbsp Ajwain - 1 tsp Coriander powder - 2 tsp Red Chilli powder - 1 tsp Amchur powder - 1 tsp Method : 1. Wash arbi nicely to remove all the mud and dirt 2. Boil it in cooker with enough water for 2-3 whistles 3. Let the boiled arbi cool 4. Peel the arbi 5.  Lightly press the arbi between your palms and flatten it 6. Heat oil in a kadahi or pan 7. Add ajwain and let it crackle 8. Add coriander powder, red chilli powder and lower the heat 9. Now add the flattened arbi in the pan one by one, spreading them in the pan  10. Mango Chunda/Sweet Pickle / Kuchla Ingredients: Raw Mango - 1 kg Salt - 2 tbsp Hing ( Asafoetida) - 1/2 tsp Big Cardamom - 4 Cloves - 8 Cumin seeds -  1 tsp Black Pepper - 1/2 tsp Cinnamon - 1" piece Fennel seeds - 1 tbsp Red Chilli Powder - 1 tbsp Jaggery - 1/2 kg Method: 1. Peel the mangoes 2. Grate the mangoes 3. Add Hing and salt to the grated mangoes 4. Mix it with a clean and dry spoon and cover it with a muslin cloth 5. Keep it in sun for 2 days (Do mix it once a day with a clean and dry spoon) 6. Grind Big Cardamom, cloves, cumin seeds, black pepper, fennel seeds and cinnamon to a coarse powder 7.
