Sambhar Recipe with Fresh Sambhar Masala (No Tamarind)

Tamilian Sambar 



Ingredients:

Arhar (Tur) Dal - 1 cup
Onion (sliced) - 1 cup
Oil - 3 tbsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/2 tbsp
Hing - 1/2 tsp
Dry red chilli - 4
Chana dal - 1/2 tbsp
Urad dal - 1/2 tbsp
Fenugreek seeds (Methi dana) - 1/4 tsp
Coriander seeds - 1 tbsp
Fresh Coconut (grated) - 1/2 cup
Amchur powder - 2 tsp
Salt - 1 tsp
Turmeric powder - 1/2 tsp
Drumsticks - 2
Small Brinjal - 2-3
Ladyfinger / Okra / Bhindi - 5-6
Bottle gourd / Ash gourd (diced into 1-inch pieces) - 1 cup
Fresh Tomato paste - 1 cup
Curry leaves - 2 sprigs
Desi Ghee - 2 tbsp

Method:

1. Wash and soak toor dal in enough water for 30 minutes
2. Heat 1 tbsp oil in a pan
3. Add 1/4 tsp hing, cumin seeds, dry red chilli, chana dal, urad dal, methi dana, coriander seeds and lightly roast them on low heat till dal becomes lightly brown
4. Add coconut and give it a nice stir
5. Roast till coconut changes its colour
6. Remove from heat and let it cool
7. Cut drumstick into about 1.5-inch-long pieces and peel the outer skin from it
8. Cut brinjals into four long pieces each
9. Chop ladyfingers to about 1-inch-long pieces each
10. Heat 2 tbsp oil in the pan
11. Shallow fry brinjal pieces till golden brown and take them out
12. Now shallow fry ladyfinger pieces till golden brown and take them out
13. Shallow fry gourd pieces till light brown and take them out
14. Keep the fried vegetables aside
15. In pressure cooker add strained Toor dal, salt, turmeric, onion slices, 3 cup water
16. Cook on high flame for 1 whistle and then lower the flame
17. Cook on low flame for 15 minutes and then remove from heat
18. In a pan heat ghee and add mustard seeds, 1/4 tsp hing, curry leaves and let them splutter
19. Add tomato paste, a pinch of salt and saute this till ghee gets separated
20. Once done remove from heat and set aside
21. Grind the roasted masalas using 1/2 cup water to prepare sambhar masala 
22. When the pressure is released on its own, open the cooker 
23. Mash it nicely and check the consistency. If required add hot boiled water as per requirement 
24. Add the shallow fried vegetables, drumstick, cooked tomato paste in the dal and mix
25. Add the amchur powder, sambar masala and mix well  
26. Close the lid and cook for 1 whistle on medium flame
27. Let the pressure release on its own
28. Open the lid and check seasoning and adjust it
29. Enjoy this delicious Sambar with Dosa, Idli or Rice

Tips to Remember:

  • In place of amchur powder 1/2 cup tamarind pulp can be used
  • You can skip onions if you want to make it a no onion sambhar
  • It is always better to prepare fresh sambar masala
