Refreshing Cold Soups for Summer - CHILLED CUCUMBER MINT

CHILLED CUCUMBER MINT Soup

Here's a bowl of pure coolness. This yogurt soup recipe is incredibly refreshing during the warmer months. It comes together in under 10 minutes and is packed with flavor!

Ingredients:

Plain yogurt - 3.5 cups
Cucumber (peeled and chopped) - 1
Fresh mint leaves (finely chopped) - 3 tbsp
Green chilly (deseeded finely chopped) - 1
Roasted Cumin powder- 1.5 tsp
Garam masala - 1/4 tsp
Salt - 1/4 tsp
Black pepper powder - 1/4 tsp
Whole fresh mint leaves for garnish

Method:

1. In a blender add cucumber, chopped mint, green chili
2. Blend until combined and smooth
3. Add yogurt and blend till smooth
4. Add garam masala, salt, pepper and blend again
5. Chill until ready to serve
6. Serve with fresh mint leaves and ground cumin on top.
